Ingredients
  

  • 3 tbsp Strawberry Puree see "Notes" below for homemade recipe
  • 1 tsp Matcha Powder
  • 2 tbsp Warm Water
  • ¾ cup Milk dairy or non dairy
  • 1 cup Ice
  • ¼ cup Heavy Cream
  • 1 tbsp Raspberry Syrup see "Notes" below for homemade recipe

Instructions
 

  • Spoon the strawberry puree into the bottom of a 16-ounce glass. If you want a more dramatic look, spread some of it around the lower inside edges of the glass
  • Add enough ice to fill the glass most of the way. This helps the matcha layer pour in more gently and stay separate from the strawberry puree.
  • Add the matcha powder and warm water to a small bowl or cup. Whisk or froth until smooth, then stir in the milk until combined.
  • Slowly pour the matcha mixture over the ice. Pouring gently helps keep the layers more distinct and makes the finished drink look cleaner
  • In a small frothing cup or jar, combine the heavy cream and raspberry syrup.
  • Froth just until thickened but still pourable.
  • Pour the raspberry cold foam over the top of the drink and serve right away.

Notes

Strawberry Puree

To make a quick homemade strawberry puree, add about 2 cups of fresh or thawed strawberries to a blender or food processor with 1 to 2 tablespoons of sugar, depending on how sweet you want it. Blend until completely smooth. If you want it a little thinner, add a small splash of water

Homemade Raspberry Syrup

To make a quick homemade raspberry syrup, add 1 cup of raspberries, 1 cup of water, and 3/4 to 1 cup of sugar to a small saucepan over medium heat. Let it gently simmer for about 8 to 10 minutes, stirring now and then, until the raspberries break down and the sugar fully dissolves.
Once it looks bright, juicy, and slightly thickened, pour it through a fine mesh strainer to remove the seeds, pressing lightly to get all the syrup out. Let it cool, then store it in the fridge in a jar or bottle. It’s an easy way to add sweet raspberry flavor to coffee, tea, lemonade, or homemade sodas.
