Apple Flaxseed Muffins

Equipment

  • 1 Oven
  • 1 Electric or Stand Mixer - Optional, can also spoon mix by hand
  • 2 Mixing Bowls
  • 1 Muffin Pan
  • 12 Muffin Cups

Ingredients
  

  • cup Flaxseed - Recommend our Canadian Brown Flaxseed
  • ½ cup Sour Cream
  • cups Bread Flour
  • cup Sugar
  • 2 tsp Baking Powder
  • ½ tsp Baking Soda
  • tsp Salt
  • 1 Egg - beaten
  • cup Chopped Apples - leave skin on for nutrition & color
  • 3 tbsp Canola Oil
  • cup Milk
  • ¾ cup Chopped Pecans - Optional, personal taste
  • Turbinado Sugar - Optional, personal taste

Instructions
 

  • Combine the egg, vegetable oil, and milk in a bowl while blending your dry ingredients together in a separate bowl.
  • Add and stir both wet and dry ingredients together until blended. include your apples to the thick batter.
  • Grease your muffin cups before pouring in about ⅔ of the way full.
  • Sprinkle top of muffins with turbinado sugar and chopped pecans before putting in the oven.
  • Bake at 350℉ for 18-20 minutes.
