Apple Flaxseed Muffins Recipe

When my kids were growing up, I baked ALOT! We definitely had our share of sugary treats, probably a little too much. As a mom, I was always looking for new and healthy breakfast ideas.  I originally found a similar recipe on the back of a Hodgson Mill Ground Flax box and have since altered it to fit our tastes. Over time, you will begin to notice that these muffins are not just delicious in the morning, they are great as an afternoon snack. The benefits of this recipe include its simplicity, flexibility, nutrition, and taste (of course)!

APPLE FLAX SEED MUFFIN RECIPE

Ingredients

  • ⅓ cup Flaxseed (We recommend our Canadian Brown Flaxseed)
  • ½ cup Sour Cream
  • 1½ cups Bread Flour
  • ⅔ cup Sugar
  • 2 teaspoons Baking Powder
  • ½ teaspoon Baking Soda
  • 1¼ teaspoons Salt
  • 1 Egg, beaten
  • 1¾ cup chopped apples (leave the skin on for color and nutritional value)
  • 3 tablespoons Canola Oil
  • ⅔ cup Milk
  • ¾ cup Chopped Pecans (Optional – depending on your personal taste)
  • Turbinado Sugar (Optional – depending on your personal taste)

Instructions

  1. Combine the egg, vegetable oil, and milk in a bowl while blending your dry ingredients together in a separate bowl.
  2. Add and stir both wet and dry ingredients together until blended. include your apples to the thick batter.
  3. Grease your muffin cups before pouring in about ⅔ of the way full.
  4. Sprinkle top of muffins with turbinado sugar and chopped pecans before putting in the oven.
  5. Bake at 350℉ for 18-20 minutes.

APPLE FLAXSEED BUNDT CAKE

We primarily follow this recipe to bake delicious muffins, but we’ve also enjoyed it in bundt form by utilizing a bundt pan. If you are interested in transforming this recipe into an Apple Flaxseed Bundt Cake, you will need to make a couple adjustments:

  1. Double the ingredients
  2. Lengthen the baking time to ~ 60 minutes. Insert a toothpick into the cake. When it comes out clean, it is ready to pull out of oven.

This bundt cake is delicious “as is,” but you can take the sweetness up a notch by adding our Vanilla Bean Cream Cheese Frosting!

    Use honey crisp or pink lady apples and don’t forget to grease the muffin cups
