Blueberry Lemon Poppy Seed Energy Balls

Equipment

  • 1 Blender or Food Processor
  • 1 Medium Mixing Bowl
  • 1 Large Spoon for Mixing
  • 1 Fridge/Freezer - To store energy balls

Ingredients
  

  • 2 cups Almond Flour
  • 2 Lemons zested & juiced
  • cup Honey
  • cup Rolled Oats
  • ½ cup Dried Blueberries
  • 2 tbsp Fresh European Poppy Seeds - Recommend link in "Notes" below

Instructions
 

  • Add almond flour, lemon zest, lemon juice, and honey to a blender or food processor and blend until smooth.
  • Add in half of the oats and pulse again until smooth.
  • Transfer the contents from the blender to a bowl.
  • Add in the remaining oats, dried blueberries, and poppy seeds. Mix until all ingredients are well incorporated.
  • Using a spoon or cookie dough scooper, scoop out 24 portions. With your hands, roll each portion into a ball.
  • Store the balls in an airtight container in the fridge for up to 2 weeks or freeze for up to 6 months.
