Blueberry Lemon Poppy Seed Energy Balls
Who else needs a quick fix on the way out of the door or after a workout? These Energy Balls are packed with goodness, and easy to grab! I adapted this recipe from Ashley Fehr over at The Recipe Rebel, adding my own twist and of course our Blue Bird Poppy Seeds™! These are easily customizable, feel free to substitute your favorite dried fruit or other add-ins. What flavor combination is your favorite?

Blueberry Lemon Poppy Seed Energy Balls Recipe

Ingredients
- 2 cups Almond Flour
- 2 Lemons, zested and juiced
- 1/3 cup Honey
- 1 1/4 cup Rolled Oats
- 1/2 cup Dried Blueberries
- 2 tbsp European Poppy Seeds (Recommend Blue Bird Baking Poppy Seeds)
Instructions
- Add almond flour, lemon zest, lemon juice, and honey to a blender or food processor and blend until smooth.
- Add in half of the oats and pulse again until smooth.
- Transfer the contents from the blender to a bowl.
- Add in the remaining oats, dried blueberries, and poppy seeds. Mix until all ingredients are well incorporated.
- Using a spoon or cookie dough scooper, scoop out 24 portions. With your hands, roll each portion into a ball.
- Store the balls in an airtight container in the fridge for up to 2 weeks or freeze for up to 6 months.

Delicious & relatively healthy energy balls that are fun and simple to make.
Equipment
- 1 Blender or Food Processor
- 1 Medium Mixing Bowl
- 1 Large Spoon for Mixing
- 1 Fridge/Freezer – To store energy balls
Ingredients
- 2 cups Almond Flour
- 2 Lemons zested & juiced
- ⅓ cup Honey
- 1¼ cup Rolled Oats
- ½ cup Dried Blueberries
- 2 tbsp Fresh European Poppy Seeds – Recommend link in "Notes" below
Instructions
- Add almond flour, lemon zest, lemon juice, and honey to a blender or food processor and blend until smooth.
- Add in half of the oats and pulse again until smooth.
- Transfer the contents from the blender to a bowl.
