Recipe – Blueberry Lemon Poppy Seed Energy Balls

Who else needs a quick fix on the way out of the door or after a workout? These Energy Balls are packed with goodness, and easy to grab! I adapted this recipe from Ashley Fehr over at The Recipe Rebel, adding my own twist and of course Blue Bird Poppy Seeds! These are easily customizable, feel free to substitute your favorite dried fruit or other add-ins. What flavor combination is your favorite?

Ingredients 

2 cups almond Flour
2 lemon, zested and juiced
1/3 cup honey
1 1/4 cups rolled oats
1/2 cup dried blueberries
1/4 cup Blue Bird Poppy Seeds

Instructions

Add almond flour, lemon zest, lemon juice, and honey to a blender or food processor and blend until smooth.

Add in half of the oats and pulse again until smooth.

Transfer the contents from the blender to a bowl.

Add in the remaining oats, dried blueberries, and poppy seeds. Mix until all ingredients are well incorporated.

Using a spoon or small food disher, scoop out 24 portions. With your hands, roll each portion into a ball.

Store the balls in an airtight container in the fridge for up to 2 weeks, or freeze for up to 6 months.
