Who else needs a quick fix on the way out of the door or after a workout? These Energy Balls are packed with goodness, and easy to grab! I adapted this recipe from Ashley Fehr over at The Recipe Rebel, adding my own twist and of course Blue Bird Poppy Seeds™! These are easily customizable, feel free to substitute your favorite dried fruit or other add-ins. What flavor combination is your favorite?
Add almond flour, lemon zest, lemon juice, and honey to a blender or food processor and blend until smooth.
Add in half of the oats and pulse again until smooth.
Transfer the contents from the blender to a bowl.
Add in the remaining oats, dried blueberries, and poppy seeds. Mix until all ingredients are well incorporated.
Using a spoon or small food disher, scoop out 24 portions. With your hands, roll each portion into a ball.
Store the balls in an airtight container in the fridge for up to 2 weeks, or freeze for up to 6 months.
