Equipment

  • 1 Muffin Baking Pan
  • 1 Large Mixing Bowl
  • 1 Medium Mixing Bowl
  • 1 Whisk or Large Spoon
  • 1 Measuring Cup
  • 12 Muffin Cups

Ingredients
  

  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • ¾ cup Granulated Sugar
  • ¼ cup Vegetable Oil
  • ¼ cup Unsweetened Applesauce
  • 1 cup Oat Milk or Almond Milk
  • 2 tsp Vanilla Extract

Instructions
 

  • Preheat oven to 375℉ and prepare the muffin baking pan by adding paper muffin liners. I also recommend spraying the liners with cooking oil spray to help remove the muffins after baking
  • Grab a large mixing bowl and combine flour, baking powder and salt. Suggest using a whisk, but you can also use a large mixing spoon.
  • In a separate medium mixing bowl, combine granulated sugar, oil, applesauce, almond milk and vanilla extract.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Make sure to not overmix.
  • Pour the batter into the prepared muffin cups. Fill anywhere between ⅔ – ¾ full to allow room for baking.
  • Bake at 375℉ for 18-20 minutes or until a toothpick inserted into the center of one of the muffins comes out clean.
  • Carefully remove the muffins from the oven and allow to cool for 10 minutes.
