Preheat oven to 375℉ and prepare the muffin baking pan by adding paper muffin liners. I also recommend spraying the liners with cooking oil spray to help remove the muffins after baking
Grab a large mixing bowl and combine flour, baking powder and salt. Suggest using a whisk, but you can also use a large mixing spoon.
In a separate medium mixing bowl, combine granulated sugar, oil, applesauce, almond milk and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until just combined. Make sure to not overmix.
Pour the batter into the prepared muffin cups. Fill anywhere between ⅔ – ¾ full to allow room for baking.
Bake at 375℉ for 18-20 minutes or until a toothpick inserted into the center of one of the muffins comes out clean.
Carefully remove the muffins from the oven and allow to cool for 10 minutes.
