Easy Dairy Free Eggless Vanilla Muffins

After going through a cheesecake phase, we’ve decided to venture into a more “breakfast-friendly” journey with some muffin recipes. I also have recently received messages from several of our customers/readers requesting some dairy-free and eggless recipe options. I added the requests to the muffin journey, and came up with this recipe for Easy Dairy Free Eggless Vanilla Muffins. Just like many other recipes, we tried these out with our family, and they were a big hit! This is a quick & simple recipe that you don’t want to miss out on.

Easy Dairy-Free Eggless Vanilla Muffins Recipe

This recipe only includes 8 ingredients and is very simple to follow. I used oat milk when we made the muffins, but you can also use almond milk or any other plant-based milk to suit your preference. You can also make your own homemade applesauce (I did in the video above) by blending up apples. Now, let’s get started…

INGREDIENTS

  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • ¾ cup Granulated Sugar
  • ¼ cup Vegetable Oil
  • ¼ cup Unsweetened Applesauce
  • 1 cup Oat Milk (or Almond Milk)
  • 2 tsp Vanilla Extract

INSTRUCTIONS

  1. Preheat oven to 375℉ and prepare the muffin baking pan by adding paper muffin liners. I also recommend spraying the liners with cooking oil spray to help remove the muffins after baking.
  2. Grab a large mixing bowl and combine flour, baking powder and salt. Suggest using a whisk, but you can also use a large mixing spoon.
  3. In a separate medium mixing bowl, combine granulated sugar, oil, applesauce, almond milk and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Make sure to not overmix.
  5. Pour the batter into the prepared muffin cups. Fill anywhere between ⅔ – ¾ full to allow room for baking.
  6. Bake at 375℉ for 18-20 minutes or until a toothpick inserted into the center of one of the muffins comes out clean.
  7. Carefully remove the muffins from the oven and allow to cool for 10 minutes.
