- 1 cup Unsalted Butter - softened
- 1 ¼ cup Granulated Sugar
- 1 Large Egg + 1 Egg Yolk
- 2 tsp Vanilla Bean Extract
- 1 Vanilla Bean
- 2 tsp Baking Powder
- 2 ½ cups All-Purpose Flour
- ½ tsp Salt
Preheat oven to 350°F and prepare your baking sheets with parchment paper.
Grab a medium mixing bowl, and use a whisk to combine flour, baking powder and salt.
In a separate large mixing bowl, use a handheld or stand mixer to cream the sugar and softened butter until light and fluffy. This should take 2-3 minutes on medium speed.
Then, beat in the egg, egg yolk, and vanilla extract. Take the vanilla bean and slice it vertically, then scrape out the vanilla caviar and mix it in as well.
Use a cookie dough scoop or large spoon to add rounded balls of dough to the prepared baking sheets
Bake @ 350°F for 10-12 minutes or until the edges are golden brown. Carefully, remove the cookies from the oven and allow them to cool for 5-10 minutes.
