  • 2 Cookie Baking Sheets
  • 1 Medium Mixing Bowl
  • 1 Large Mixing Bowl
  • 1 Whisk - or large spoon
  • 1 Dough Scoop
  • Parchment Paper - or Cooking Oil

Ingredients
  

  • 1 cup Unsalted Butter - softened
  • 1 ¼ cup Granulated Sugar
  • 1 Large Egg + 1 Egg Yolk
  • 2 tsp Vanilla Bean Extract
  • 1 Vanilla Bean
  • 2 tsp Baking Powder
  • 2 ½ cups All-Purpose Flour
  • ½ tsp Salt

Instructions
 

  • Preheat oven to 350°F and prepare your baking sheets with parchment paper.
  • Grab a medium mixing bowl, and use a whisk to combine flour, baking powder and salt.
  • In a separate large mixing bowl, use a handheld or stand mixer to cream the sugar and softened butter until light and fluffy. This should take 2-3 minutes on medium speed.
  • Then, beat in the egg, egg yolk, and vanilla extract. Take the vanilla bean and slice it vertically, then scrape out the vanilla caviar and mix it in as well.
  • Use a cookie dough scoop or large spoon to add rounded balls of dough to the prepared baking sheets
  • Bake @ 350°F for 10-12 minutes or until the edges are golden brown. Carefully, remove the cookies from the oven and allow them to cool for 5-10 minutes.
