Hello again, everyone! It’s the end of summer break, and kids are preparing to go back to school. This busy season always reminds me of how limited our time is. This is a great time to dedicate a recipe post to our Double Vanilla Sugar Cookies. These cookies are made for vanilla lovers, just like our popular Chocolate Chip Cookies made with Madagascar Vanilla Beans, but this recipe includes BOTH vanilla beans and vanilla bean extract. Whether you need a quick and easy dessert for a birthday party, are having friends/family over, or are just looking for a simple recipe to bake and enjoy as a family, this recipe is a perfect fit. DOUBLE VANILLA SUGAR COOKIES | RECIPE
This is a simple recipe that only requires eight ingredients, and it makes two dozen (24) cookies.
The Vanilla Paste Option
The “double vanilla” in this recipe is for the Vanilla Beans and Vanilla Extract, but if you’re feeling frisky, you can substitute Vanilla Paste for the extract. You can substitute vanilla paste for vanilla extract 1:1, so this recipe would require 2 tsp Vanilla Paste. If you are unfamiliar with Vanilla Paste, no worries! INGREDIENTS
- 1 cup (2 sticks) Unsalted Butter, softened
- 1 ¼ cup Granulated Sugar
- 1 Large Egg + 1 Egg Yolk
- 2 tsp Vanilla Extract
- 1 Vanilla Bean
- 2 tsp Baking Powder
- 2 ½ cups All-Purpose Flour
- ½ tsp Salt

INSTRUCTIONS
- Preheat oven to 350°F and prepare your baking sheets with parchment paper.
- Grab a medium mixing bowl, and use a whisk to combine flour, baking powder and salt.
- In a separate large mixing bowl, use a handheld or stand mixer to cream the sugar and softened butter until light and fluffy. This should take 2-3 minutes on medium speed.
- Then, beat in the egg, egg yolk, and vanilla extract. Take the vanilla bean and slice it vertically, then scrape out the vanilla caviar and mix it in as well.
- Use a cookie dough scoop or large spoon to add rounded balls of dough to the prepared baking sheets
- Bake @ 350°F for 10-12 minutes or until the edges are golden brown. Carefully, remove the cookies from the oven and allow them to cool for 5-10 minutes.

We did it, we’ve now baked a batch of two dozen double vanilla sugar cookies! When you are serving these cookies to others, you can point out the tiny black specks.
