Preheat oven to 350℉ and prepare a 9 x 9″ baking pan with parchment paper.
In a large mixing bowl, combine oats, flax seeds, chia seeds, chocolate chips and salt.
In a separate small saucepan over low heat, stir/whisk the maple syrup and coconut oil together until they are smooth and melted. Next, stir in the scraped vanilla caviar.
Pour the maple mixture over the oat mixture and mix very well to combine.
Transfer the mixture to the prepared 9 x 9″ baking pan. Press very firmly into an even layer. The firm pressure is important to ensure the finished granola bars maintain their proper shape.
Bake @ 350℉ for 18-20 minutes until the top is golden and the granola is firm.
Carefully remove the pan from the oven and let the pan cool for ~ 10 minutes. Then cut the granola into 16 even bars.
