Homemade Chocolate Chip Flax Granola Bars
After finishing our recipe for Dairy Free & Eggless Muffins, I felt it would be a good to have a SNACK TIME, so I pulled out this recipe. This granola bar recipe is very easy to make. I am far from a granola bar expert, and it was quick and easy for me. These bars contain ground flax and chia seeds. The flax contains nutrients like fiber and omega 3, and chia also contains fiber and antioxidants. Both of these ingredients were added because of their nutrition and they make this recipe more filling. This makes a great snack option for the whole family, including kids!

Homemade Chocolate Chip Granola Bars w/ Flax & Chia
These aren’t just your standard chocolate chip granola bars. As stated above, we’ve added flax, chia and fresh vanilla. There are plenty of articles written about dietary flaxseed improving human health, and chia shares many of the same benefits. The vanilla adds the natural flavor that takes this recipe to the next level. Now that you should be fully excited to try out this recipe… let’s get started!
INGREDIENTS
- 2 cups Rolled Oats
- 1/4 cup Ground Flax Seeds
- 2 tbsp Chia Seeds
- 1/2 cup Semi-Sweet Chocolate Chips (Recommend Mini Size)
- 1/4 cup Pure Maple Syrup
- 1/4 cup Coconut Oil
- 1/4 tsp Salt
- 1 Vanilla Bean, scraped (Recommend Grade A Madagascar Vanilla Beans)

INSTRUCTIONS
- Preheat oven to 350℉ and prepare a 9 x 9″ baking pan with parchment paper.
- In a large mixing bowl, combine oats, flax seeds, chia seeds, chocolate chips and salt.
- In a separate small saucepan over low heat, stir/whisk the maple syrup and coconut oil together until they are smooth and melted. Next, stir in the scraped vanilla caviar.
- Pour the maple mixture over the oat mixture and mix very well to combine.
- Transfer the mixture to the prepared 9 x 9″ baking pan. Press very firmly into an even layer. The firm pressure is important to ensure the finished granola bars maintain their proper shape.
- Bake @ 350℉ for 18-20 minutes until the top is golden and the granola is firm.
- Carefully remove the pan from the oven and let the pan cool for ~ 10 minutes. Then cut the granola into 16 even bars.
