Preheat your oven to 350°F and prepare your (2) baking sheets with parchment paper.
Grab a large mixing bowl, and cream together the softened butter, white sugar, and brown sugar with a handheld or stand mixer. Cream until light and fluffy, which should take 2-3 minutes.
Add in the eggs and vanilla extract and mix thoroughly.
Grab a separate medium mixing bowl, and combine flour, baking soda, and salt by whisking.
Carefully add the dry ingredients to the wet ingredients. Mix together for a few minutes until the ingredients are all well combined.
Gradually stir in the oats and chocolate chips until they are mixed consistently throughout the dough.
Use a cookie dough scoop or large spoon to add rounded balls of dough (roughly tablespoon sized) to the prepared baking sheets. Space them roughly 2 inches apart
Bake @ 350°F for 10-12 minutes, or until the edges are golden brown and the centers are soft and chewy.
Carefully remove the baking sheets from the oven, and allow the cookies to cool for 5-10 minutes. Now they are ready to enjoy!
