Ingredients
  

  • ½ cup Unsalted Butter - softened
  • ½ cup Granulated Sugar
  • ½ cup Brown Sugar
  • 1 cup Pumpkin Puree
  • 1 Large Egg
  • 2 tsp Vanilla Extract see our Lone Goose Vanilla Extract
  • 2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1 tsp Baking Powder
  • ½ tsp Salt
  • 1 tsp Ground Cinnamon
  • ½ tsp Ground Nutmeg
  • ½ tsp Ground Ginger
  • ¼ tsp Ground Cloves
  • 1 cup Chopped Walnuts
  • ¾ cup Semi-Sweet Chocolate Chips

Instructions
 

  • Preheat your oven to 350°F and prepare (2) baking sheets with parchment paper.
  • Grab a large mixing bowl, and add in the stick of softened butter, granulated sugar, and brown sugar. Cream together with a handheld or stand mixer until light and fluffy.
  • Mix in the pumpkin puree, egg, and vanilla extract until well combined
  • Grab a separate medium mixing bowl, and add in the flour, baking soda, baking powder, and salt. Then add in fun fall spices… the cinnamon, nutmeg, ginger, and cloves.
  • Time for the mixing bowls to meet… slowly add the dry ingredients to the wet ingredients and carefully mix until just combined.
  • Slowly mix in the chopped walnuts and chocolate chips.
  • Use a cookie dough scoop or large spoon to add rounded balls of dough (roughly tablespoon sized) to the prepared baking sheets. Space them roughly 2 inches apart
  • Bake @ 350°F for 10-12 minutes, or until the edges are golden brown.
  • Carefully remove the baking sheet from the oven and allow the cookies to cool for 5-10 minutes, then enjoy your cookies
