Pumpkin Walnut Cookies

I’m continuing our 2024 Fall Recipe series (I believe this is Fall Recipe #6) with another pumpkin-themed recipe. The past few recipes have been requests from our community of bakers, and this one is for some Easy Pumpkin Walnut Cookies. I can see why this was requested, the flavor of the pumpkin and spices matched with the crunchy walnuts create a great autumn vibe. Also, this recipe is perfect to bake as a family on those cooler fall days. It’s not complicated, but it has enough ingredients for everyone to take part in helping. It’s currently late October, and these cookies align perfectly with this time of the year as the temperature drops and we approach Halloween and Thanksgiving.

PUMPKIN WALNUT COOKIES | FULL RECIPE

This recipe includes spices that will leave your house smelling like fall. These spices include the cinnamon, nutmeg, ginger, and cloves. Most of our cookie recipes, including this one, make roughly (2) dozen standard-sized cookies. If you are hosting or making cookies for a larger event, simply double or triple this recipe.
The chocolate chips included in the ingredients section are optional, but we thought it tasted better with them. Just go with your preference, the cookies are great either way!
INGREDIENTS

- ½ cup (1 stick) Unsalted Butter, softened
- ½ cup Granulated Sugar
- ½ cup Brown Sugar
- 1 cup Pumpkin Puree
- 1 Large Egg
- 2 tsp Vanilla Extract (Check out our Natural Madagascar Vanilla Extract)
- 2 cups All-Purpose Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- ½ tsp Salt
- 1 tsp Ground Cinnamon
- ½ tsp Ground Nutmeg
- ½ tsp Ground Ginger
- ¼ tsp Ground Cloves
- 1 cup Chopped Walnuts
- ¾ cup Semi-Sweet Chocolate Chips

INSTRUCTIONS

- Preheat your oven to 350°F and prepare (2) baking sheets with parchment paper.
- Grab a large mixing bowl, and add in the stick of softened butter, granulated sugar, and brown sugar. Cream together with a handheld or stand mixer until light and fluffy.
- Mix in the pumpkin puree, egg, and vanilla extract until well combined
- Grab a separate medium mixing bowl, and add in the flour, baking soda, baking powder, and salt. Then add in fun fall spices… the cinnamon, nutmeg, ginger, and cloves.
- Time for the mixing bowls to meet… slowly add the dry ingredients to the wet ingredients and carefully mix until just combined.
- Slowly mix in the chopped walnuts and chocolate chips.
- Use a cookie dough scoop or large spoon to add rounded balls of dough (roughly tablespoon sized) to the prepared baking sheets. Space them roughly 2 inches apart
- Bake @ 350°F for 10-12 minutes, or until the edges are golden brown.
- Carefully remove the baking sheet from the oven and allow the cookies to cool for 5-10 minutes, then enjoy your cookies

The pumpkin chocolate chip cookies are good too
Many ingredients but overall easy recipe. Family friendly too (if your kids like nuts)

Make sure you use fresh walnuts. They give the cookies a nice crunch.
