1 Cookie Dough Scoop - Or large spoon
1 Wire Racks - For cooling, optional
- 3 cups All-Purpose Flour
- 1½ tsp Baking Powder
- 1 tsp Baking Soda
- 1 tsp Salt
- 2 tsp Pure Vanilla Bean Extract - suggest our Natural Vanilla Bean Extract
- 1 cup Pumpkin Puree
- 2 tsp Pumpkin Spice
- 1½ tsp Ground Cinnamon
- ¾ cup Unsalted Butter, softened
- ¾ cup Light Brown Sugar
- ½ cup Granulated Sugar
- 1 Large Egg
Preheat oven to 350℉ and prepare baking sheet by adding parchment paper or silicone baking mat.
In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
Use an electric or stand mixer to mix butter, brown sugar, and granulated sugar.
Add pumpkin puree, egg, and vanilla extract, and mix thoroughly.
Slowly add the dry ingredients (from Step #2) on the low speed setting until combined.
Use cookie dough scoop or large spoon to add dough to baking sheet.
Bake for 15 minutes until edges are golden brown.
Remove from oven and cool on baking sheets, then transfer to wire racks (optional) to finish cooling.
