Welcome to our Pumpkin Spice Cookies Recipe! We started a series of posts a few days ago for our 2023 Lone Goose Bakery Holiday Recipes! We know many of you (like us) are fans of the Pumpkin Spice craze that happens this time of year, so we thought it would be a great time to share one of our favorite recipes using this fun & delicious ingredient, our Pumpkin Spice Cookies Recipe! One of the great things about this recipe is that it is quick and easy to bake, and the cookies taste great! Ready? Let’s get started…

PUMPKIN SPICE COOKIES

Here is our Pumpkin Spice Cookies Recipe. As stated above, it is quick, easy and delicious!

Ingredients

  • 3 cups All-Purpose Flour
  • 1½ teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 2 teaspoons Pure Vanilla Bean Extract (We always recommend our Natural Vanilla Bean Extract)
  • 1 cup Pumpkin Puree
  • 2 teaspoons Pumpkin Spice (Check out our Homemade Pumpkin Spice Recipe)
  • 1½ teaspoons Ground Cinnamon
  • ¾ cup Unsalted Butter, softened
  • ¾ cup Light Brown Sugar
  • ½ cup Granulated Sugar
  • 1 Large Egg

Instructions

  1. Preheat oven to 350℉ and prepare baking sheet by adding parchment paper or silicone baking mat.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  3. Use an electric or stand mixer to mix butter, brown sugar, and granulated sugar.
  4. Add pumpkin puree, egg, and vanilla extract, and mix thoroughly.
  5. Slowly add the dry ingredients on the low speed setting until combined.
  6. Use cookie dough scoop or large spoon to add dough to baking sheet.
  7. Bake for 15 minutes until edges are golden brown.
  8. Remove from oven and cool on baking sheets, then transfer to wire racks (optional) to finish cooling.
  9. Enjoy!!!

  • 1 Cookie Dough Scoop – Or large spoon
  • 1 Wire Racks – For cooling, optional

    Fairly easy to bake and wonderful taste. I recommend making their pumpkin spice IF you have time. Wish they sold it
