Recipe – Spring Berry Poppy Seed Salad

May is a crazy month for almost everyone I talk to, myself included! I find myself eating out more out of convenience, which in turn starts to wreak havoc on my waistline! My aunt originally introduced us to this salad and after tweaking a few things, I love the result. This salad is perfect for mid-day cravings as well as an agreeable side item to multiple dinner options. Blue Bird Poppy Seeds™ adds the perfect amount of nutty flavor, perfectly complimenting the pecans and blueberries! I hope you all enjoy this fresh and enticing salad as much as I did!

Ingredients

Spring Berry Poppy Seed Salad

1/2 pint strawberries, sliced
2 (20 ounces) bag spring salad mix
1/2 cup pecans, chopped
1/2 red onion, chopped
1/2 pound bacon, crispy & chopped
8 ounces blueberries
2 tablespoon Blue Bird Poppy Seeds™
**Blue Cheese, crumbled; optional.**

In a large bowl, toss all the salad ingredients together.

Poppy Seed Dressing

1/2 cup sugar
2 tablespoon sesame seeds
2 tablespoon Blue Bird Poppy Seeds™
1 1/2 teaspoon minced onion
1/4 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar

Mix all dressing ingredients together in a glass jar and shake well. Once the ingredients are incorporated toss over the salad right before serving. Enjoy!!
