Recipe – Lemon Poppy Seed Overnight Oats

If you are like me, mornings are a whirlwind of activity. Between trying to find my keys and remembering to turn off my straightener, there is rarely time to think about breakfast. I struggled with this for years until I stumbled across Overnight Oats. These are the perfect make-ahead breakfast for those busy mornings on the go or even an afternoon snack! Blue Bird Poppy Seeds™ adds that extra fiber and energy to help you crush that to-do list. This is a perfect starter breakfast for toddlers and even your bigger kids, just trade the mason jars for baby food jars. This is also the perfect recipe for those who adhere to a Vegan lifestyle, sub your favorite nut milk in lieu of dairy milk, non-dairy yogurt for the Greek yogurt and maple syrup for the honey. Ingredients

125 grams rolled oats (regular or gluten-free)
58 grams lemon greek yogurt
77 grams milk
1 teaspoon pure vanilla bean paste
3 tablespoons Blue Bird Poppy Seeds™
Zest of a lemon
1-2 teaspoons honey
Dash of salt

Instructions

Add all of the wet ingredients into a bowl and whisk until combined. Add in the oats, salt, and Blue Bird Poppy Seeds™. Whisk again and transfer the mixture to a mason jar or air-tight container.

Give a quick shake and move to the fridge to chill overnight, a minimum of five hours.

In the morning, remove from the fridge and give a quick stir. I like to top mine with a little bit of Honey Butter and dive in!
