Recipe – Watermelon Poppy Seed Salad

Watermelon season is my absolute favorite time of the year! I can't pass up a good melon, especially when they are ripe and on sale! While running around town this weekend I had salad ingredients in my shopping cart and had just finished selecting the perfect watermelon. While standing in the eternally long check-out line I was struck with the perfect salad pairing! I personally love salt on my watermelon so it only seemed fitting to include prosciutto in this salad. The sweetness of the watermelon is perfectly balanced by the salty prosciutto and nutty Blue Bird Poppy Seeds™. I added mint and basil to give some extra flavor and zip. This salad is super easy to throw together, and it will be sure to impress at the next family gathering or your 4th of July celebration!
Ingredients
Watermelon Poppy Seed Salad
4-5 cups watermelon, cubed
1 bag arugula
6 ounces prosciutto
1/2 cup feta cheese
1/2 cucumber, shaved
1/2 red onion, sliced
8-10 leaves of fresh basil
8-10 leaves of fresh mint
3 tablespoons Blue Bird Poppy Seeds™
Poppy Seed Dressing
1 cup balsamic vinegar
1/2 cup red wine vinegar
1 tablespoon garlic powder
1 tablespoon dried mustard
1/2 tablespoon smoked paprika
3 tablespoon Blue Bird Poppy Seeds™
Add all the ingredients to a medium-sized bowl and whisk until smooth. Pour into an oil jar or another air-tight container.
Instructions
Combine the salad, herbs, onion, and cucumber in a large salad bowl and set aside.
On a cutting board slice the watermelon and cut the fruit into cubes. Move the cubes to one side of the cutting board. On the clear side, slice the prosciutto into strips.
Add the watermelon, prosciutto, and poppy seeds to the bowl of salad and toss.
Finally, drizzle a bit of the dressing on top of the salad and toss a final time.
Divide into bowls and add additional dressing as desired!
