Banana Chocolate Chip Muffins Recipe

We enjoyed this recipe as a family because it was easy enough for the little ones to help. If you have kids, you can invite them to assist too. While these muffins are a perfect fit for breakfast, they can also be enjoyed as a snack throughout the day. This recipe makes one dozen (12) standard size muffins.

Note: This recipe includes 3 ripe bananas, mashed. In order to mash the bananas, they need to be fairly dark yellow/brown. This also improves the flavor they add to the muffins. If you have green bananas, place them in a sealed plastic bag for a few days to let them ripen.

Mixing sugar into muffin batter
  1. Preheat oven to 350°F. Prepare your muffin pan by adding paper muffin liners. I also recommend spraying the liners with cooking oil spray to help remove the muffins after baking.
  2. In a large bowl, combine flour, baking soda, baking powder, and salt. You can use a whisk to mix.
  3. In a separate bowl, use a hand or stand mixer to combine mashed bananas, granulated sugar, the egg, melted butter, and vanilla extract.
  4. Add the banana mixture to the dry ingredients until just moistened. Next, carefully stir in the chocolate chips.
  5. Add the muffin batter to the prepared muffin pan. Fill each cup around 2/3 full to allow room for baking.
  6. Bake in the preheated oven at 350°F for 18-20 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
  7. Carefully remove from the oven and allow the muffins to cool for 10 minutes, then enjoy!
