Homemade Banana Chocolate Chip Muffins

I recently finished our strawberry and raspberry cheesecake recipes and decided to go into a new direction with these Homemade Banana Chocolate Chip Muffins. For many of you (myself included), banana chocolate chip muffins were a delicious part of breakfast growing up. We were excited to have our kids try them out, and this recipe did not disappoint. It’s a quick and simple recipe that is easy enough to bake as a family.

Banana Chocolate Chip Muffins Recipe

We enjoyed this recipe as a family because it was easy enough for the little ones to help. If you have kids, you can invite them to assist too. While these muffins are a perfect fit for breakfast, they can also be enjoyed as a snack throughout the day. This recipe makes one dozen (12) standard size muffins.
Note: This recipe includes 3 ripe bananas, mashed. In order to mash the bananas, they need to be fairly dark yellow/brown. This also improves the flavor they add to the muffins. If you have green bananas, place them in a sealed plastic bag for a few days to let them ripen.
INGREDIENTS

- 1 ½ cups All-Purpose Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- ½ tsp Salt
- 3 ripe bananas, mashed
- ¾ cup Granulated Sugar
- 1 Large Egg
- ⅓ cup Unsalted Butter, melted
- 1 tsp Vanilla Extract – Recommend our Natural Vanilla Bean Extract
- 1 cup Semi-sweet Chocolate Chips
INSTRUCTIONS

- Preheat oven to 350°F. Prepare your muffin pan by adding paper muffin liners. I also recommend spraying the liners with cooking oil spray to help remove the muffins after baking.
- In a large bowl, combine flour, baking soda, baking powder, and salt. You can use a whisk to mix.
- In a separate bowl, use a hand or stand mixer to combine mashed bananas, granulated sugar, the egg, melted butter, and vanilla extract.
- Add the banana mixture to the dry ingredients until just moistened. Next, carefully stir in the chocolate chips.
- Add the muffin batter to the prepared muffin pan. Fill each cup around 2/3 full to allow room for baking.
- Bake in the preheated oven at 350°F for 18-20 minutes or until a toothpick inserted into the middle of a muffin comes out clean.
- Carefully remove from the oven and allow the muffins to cool for 10 minutes, then enjoy!
