Chocolate Chip Brookies
As I continue to launch videos for many new recipes, we decided to create a fun recipe for one of our favorite baked goods. You may already be aware of our love for cookies, like our popular oatmeal poppy seed cookie recipe. I wanted to add a little creativity and flavor, so I decided to create this mashup recipe. This particular recipe pairs cookies with another fun friend, brownies. The resulting dessert is familiar and loved by many and is known as a Brookie. We created this brookie recipe with chocolate chips throughout, so we titled it our Ultimate Chocolate Chip Brookie Recipe. Ultimate Chocolate Chip Brookie Recipe
The timeline of this recipe follows a pattern to make the process much easier. First, I will list out the brownie ingredients that make up the base of the brookies. I have baked many other brownie recipes, like our popular Dulce de Leche Brownies. Those brownie recipes taste great by themselves, but they tend to take a bit longer. This brownie recipe is more simple, and the brownie area also encompasses the area in between the cookie dough.
After listing the brownie ingredients, I will move on to the chocolate chip cookie dough ingredients. The cookie dough portion of this recipe is also straightforward and easy.
After the ingredients, the recipe directions follow that same order.
BROWNIE INGREDIENTS
- 1/2 cup Unsalted Butter
- 1 cup Granulated Sugar
- 2 Large Eggs
- 2 tsp Vanilla Bean Extract
- 1/4 tsp Salt
- 1/2 cup All-Purpose Flour
- 1/4 cup Cocoa Powder
- 1/4 cup Semi-sweet Chocolate Chips
COOKIE INGREDIENTS
- 3/4 cup Unsalted Butter, softened
- 3/4 cup Light Brown Sugar, lightly packed
- 1/4 cup Granulated Sugar
- 1 Large Egg
- 2 tsp Vanilla Bean Extract
- 2 cups All-Purpose Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1 cup Semi-sweet Chocolate Chips
DIRECTIONS
- Preheat your oven to 350°F and prepare a standard 9×13″ baking pan by lining with parchment paper.
- Melt the butter in a small microwave safe bowl or glass in 30 second increments until the butter is fully melted*. Then, pour the melted butter into a medium mixing bowl. Next, stir in the granulated sugar and mix for 2-3 minutes with an electric or stand mixer until fully combined.
- Slowly mix in the eggs, one at a time. Make sure each egg is fully incorporated before moving on to the next one. Then mix in the vanilla extract and salt.
- Add in the flour and cocoa powder and mix until well-combined**. Carefully fold in the chocolate chips and make sure they are spread evenly throughout the batter.
- Pour the batter into the prepared baking pan and set aside.
- To begin the cookie layer, cream the butter and sugar together in a large bowl with your electric or stand mixer until it is light and fluffy***.
- Add in the egg and vanilla extract and beat the mixture well.
- In a separate medium bowl, whisk together the flour, baking soda, and salt.
- Carefully add the dry ingredients from the medium bowl to the wet ingredients in the large bowl. Take your time and mix in the dry ingredients slowly. Then, mix until a consistently soft dough forms. Finally, carefully mix in the chocolate chips.
- Scoop out the dough into rounded balls using a dough scoop, a spoon, or your hands. Grab the brownie pan from earlier. Drop the rounded cookie dough over the brownie layer, leaving some gaps in between.
- Bake @ 350°F for 25-30 minutes, or until the cookie dough areas are golden brown and the brownie layer is set. Carefully, remove the brookies from the oven and allow them to cool ~ 10-15 minutes before cutting into pieces for serving.
Tips:
*For me, it took two 30 second intervals to melt the butter, stirring in between.
**Make sure the batter has a smooth consistency without any lumps.
