Homemade Cranberry Almond Granola Bars
After making our popular Flax Chocolate Chip Granola Bars Recipe, I decided it would be good to give all of you another choice. This is another simple granola bar recipe with a completely different flavor profile, but it is equally delicious. It works well as a snack, but it can also be used in the morning to start off your day in a healthy way. We make many of our recipes as a family, and these granola bars are another recipe that both kids and adults will enjoy, both making and eating!

Homemade Cranberry Almond Granola Bars Recipe
These granola bars aren’t just tasty, they are nutritious as well! The chopped almonds are an important ingredient, and they have been shown to have many health benefits. They contain fiber, magnesium, and other nutrients. The cranberries add a chewy texture and are packed with antioxidants. The honey does a great job of acting as a natural sweetener, and natural vanilla has a flavor profile that can’t be matched.
Note: This recipe does include peanut butter, but almond butter can be substituted instead for any of you with a peanut allergy.
Let’s get started…
INGREDIENTS
- 2 cups Rolled Oats
- 1/2 cup Chopped Almonds
- 1/2 cup Dried Cranberries
- 1/2 cup Honey
- 1/2 cup Peanut Butter
- 1/4 tsp Salt
- 1 tsp Vanilla Bean Extract
INSTRUCTIONS
- Preheat oven to 350℉ and prepare a 9×9″ baking pan by lining it with parchment paper.
- Grab a large mixing bowl, pour in the rolled oats, chopped almonds, cranberries, and salt.
- Take a small saucepan and turn on your stovetop to low heat. Next, stir in honey and peanut butter and mix together until the heated mixture has a smooth consistency.
- Carefully stir and mix in the vanilla bean extract.
- Turn off stovetop heat and remove the saucepan. Slowly pour in the heated honey/peanut butter mixture into the rolled oat mixture from Step #2. Stir/mix well to combine.
- Transfer the granola mixture to the prepared baking pan. Press very firmly into an even layer. The firm pressure is important to ensure the finished granola bars maintain their proper shape
- Bake at 350℉ for 20-25 minutes until the top is golden and the granola is firm.
- Remove from the oven and allow the granola to cool completely before cutting into 16 equal bars.
