Apple Cinnamon Muffins
Hello everybody, we’re back AGAIN with another fun recipe. I’m writing this post as the temperatures this weekend have gotten much cooler, and the NFL & NCAA Football seasons have both gotten into full swing. It also means fall sports have begun again in earnest for the little ones. This recipe will kick off (pun intended) a new fall recipe series, and we’re beginning with these awesome Apple Cinnamon Muffins!
I’m sharing this recipe first because it has been a big hit in our house and we’ve gotten great feedback and reviews from our recipe video. The smell of the apple and cinnamon (plus the hint of ground nutmeg) filling your house will get you excited for the season. These muffins are perfect for the cool and crisp mornings, an after school snack, or the small outdoor gatherings that make this time of year so special. One of my favorite parts has been how quick and easy it is to whip up, even on a busy weekday. So let’s get started!

Apple Cinnamon Muffins | Recipe
This recipe makes one dozen awesome Apple Cinnamon Muffins. If you’re having a larger gathering, don’t worry! This is an easy recipe to double or even triple. When the fall weather starts cooling things down, these muffins are perfect.
Ingredients
- 1 3/4 cups All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1/4 cup Brown Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 tsp Ground Cinnamon
- 1/4 tsp Ground Nutmeg
- 1/2 cup (1 stick) Unsalted Butter, melted
- 1/2 cup Milk
- 1 tsp Vanilla Extract
- 2 Eggs
- 2 Apples Chopped, should be 1 1/2 cups (use your preference for type of apple)

It can be substituted 1:1 for vanilla extract, so for this recipe, you can use 1 teaspoon of vanilla paste. You really should try it out!
Instructions
- Preheat your oven to 350℉ and prepare your muffin baking pan with paper liners. Consider spraying the inside of the liners with cooking oil to help remove the muffins after baking.
- Grab a large mixing bowl and add flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk together to combine.
- In another mixing bowl, add in the stick of melted butter, milk, vanilla extract, and eggs until well combined. You can use a handheld or stand mixer to mix.
- Mix in the dry ingredients to the wet ingredients. Be careful to not overmix.
- Slowly mix in the chopped apples. Stop mixing when they are evenly distributed.
- Grab the prepared muffin baking pan and fill the muffin cups ⅔-¾ of the way full with the muffin batter.
- Bake at 350℉ for 20-25 minutes or until a toothpick inserted into the center of one of the muffins comes out clean.
- Carefully remove the muffins from the oven and allow to cool for 5-10 minutes. Now they are ready to enjoy!

I used gala apples. I am a new baker but I was able to get my muffins to look like the pictures! I’d love to be able to post some.

I knew I would like these muffins when I saw the picture. I actually used vanilla extract from this website, but I’m excited to make my own vanilla paste with it next time. I liked the apple flavor… and Gala apples worked really well
