I just completed our recipe for Thick & Chewy Oatmeal Chocolate Chip Cookies, and had many of our bakers asking for a recipe for oatmeal cookies without brown sugar (a surprising number, actually). I go over some of the possible reasons why below, but I knew that I needed to make a new recipe for Oatmeal Cookies without Brown Sugar… so here it is!

Reasons for Choosing Oatmeal Cookies without Brown Sugar

Many of you prefer baking without brown sugar for many reasons…

  • Some people don’t like the taste of brown sugar and feel it is too rich due to the molasses content. This causes them to reach for the lighter more familiar flavor of granulated sugar.
  • Brown sugar can have a higher caloric content and higher glycemic index.
  • Some people avoid brown sugar because it makes cookies and other baked goods have a crispier texture. This is because brown sugar retains more moisture than granulated sugar.
  • Finally, I’m sure many of you are here because you want to make oatmeal cookies but don’t have brown sugar in your pantry. I’ve been there, no judgement here.

Recipe for Oatmeal Cookies without Brown Sugar

This is another standard cookie recipe. It makes roughly two dozen cookies. You can easily increase the ingredients by doubling for any larger gatherings. If you have any other questions, post it in the comment section below.

INGREDIENTS

  • 1 cup (2 sticks) Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 2 Large Eggs
  • 2 teaspoons of Vanilla Extract
  • 1 1/2 cups All-Purpose Flour
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 3 cups Old Fashioned Oats
  • 1 cup Semi-sweet Chocolate Chips (optional, recommend “mini” size)

INSTRUCTIONS

  1. Preheat your oven to 350°F and prepare your (2) baking sheets with parchment paper.
  2. Grab your large mixing bowl and cream together the softened sticks of unsalted butter with the granulated sugar by using a handheld or stand mixer. Cream until the mixture is light and flufy which should take 2-3 minutes.
  3. Beat in each egg, one at a time. Wait until the first egg is fully incorporated before adding the next. Then, stir in the vanilla extract.
  4. Grab another medium or large mixing bowl and whisk together the flour, baking soda, and salt.
  5. It’s time for the dry mixture and the creamed mixture to meet! Gradually add the dry mixture to the butter/sugar mixture from Step #2.
  6. Carefully stir or fold in the oats and optional chocolate chips.
  7. Use a cookie dough scoop or large spoon to add rounded balls of dough (roughly tablespoon sized) to the prepared baking sheets. Space them roughly 2 inches apart.
  8. Bake @ 350°F for 10-12 minutes until the edges are golden brown.
  9. Remove the baking sheets from the oven (carefully!). Allow the cookies to cool for 5-10 minutes.
