Hello again Blue Birds! As the weather continues to get cooler, I have shifted to making some fun recipes posts in the coffee/espresso category, to keep us all warm as we approach the Thanksgiving & Christmas. I’ve enjoyed creating and trying out all of these recipes, because I am a certified Espresso Enthusiast with a focus on lattes. Our recent adventure with Homemade Pumpkin Spice Syrup and creating a delicious Pumpkin Spice Latte was a great start, and now I’m moving onto this Cinnamon Dolce Syrup Recipe.

Cinnamon Dolce Syrup Recipe Video
I created this Cinnamon Dolce Syrup video as a quick way to follow along with the written recipe below. I make full recipe videos for a majority of the recipes posts. I have found it to be beneficial for several reasons. The videos show you that I actually have created these recipes (which can be rare online), and it allows me to personally experience everything.
For you as the viewer, the video will help you see all the details and intricancises that the written portion doesn’t show. For example, you can see how I add the ingredients and how the syrup mixture changes over time. I do my best to include extra tips that are simpler to show visually. CINNAMON DOLCE SYRUP | FULL RECIPE
This recipe makes 2 cups (16 oz) of finished Cinnamon Dolce Syrup. Two cups of syrup is equivalent to 32 tablespoons, which is enough to make 16 cinnamon dolce lattes (using 2 tbsp of syrup each). This is a good amount for individual households, but if you are making some for friends or relatives, you can multiply the recipe accordingly.
As you can see from the video above and pictures on this post, I use and recommend using flip top bottles for storing the syrup. They do a great job of staying airtight in the fridge and can be flipped open in an instant. You don’t have to use a flip top bottle, any air tight container will work.
INGREDIENTS
- 1 ½ cups Water
- 1 cup Granulated Sugar
- ½ cup Brown Sugar, packed
- 2 Cinnamon Sticks
- 1 tsp Ground Cinnamon
- 1 tsp Vanilla Extract (Check out our Premium Small Batch Vanilla Extract)
INSTRUCTIONS
- Grab a medium saucepan and add in water, granulated sugar, and brown sugar. Mix until the sugar is dissolved into water. Note: Do NOT heat the saucepan at this point.
- Next, add in the cinnamon sticks and ground cinnamon to the saucepan and mix in with the other ingredients.
- Turn the stovetop onto medium heat. Bring the mixture to a low boil, then reduce heat and simmer for 10 minutes, stirring regularly. The syrup will begin to thicken slightly over time.
- Remove the saucepan from heat and add in the vanilla extract. The mixture is now officially syrup.
- Allow the syrup to cool for 5-10 minutes, then store in an airtight container.
- Enjoy your Cinnamon Dolce Syrup! Use in place of vanilla syrup to transform your vanilla latte to a cinnamon dolce latte.
Note: Many of our syrup recipes require straining to remove sediment and pieces of the ingredients prior to usage and storage. This particular recipe does not require straining, and I don’t recommend straining. The cinnamon and sugar all dissolves into the water. You can remove the cinnamon sticks, but I suggest transferring them to your chosen storage container.

I went into this recipe thinking that Cinnamon Dolce Syrup was made during the holiday season between Halloween and New Years. I was curious, so I decided to research, and I was surprised to discover that the Google Trends data shows that the syrup is extremely popular year round. After making this syrup myself, I can see why. Just make sure to enjoy the syrup that you have made, and you can save this recipe to make more whenever you run out… cheers!

I prefer making in syrup form because it gives me flexibility to use over time. Ya’ll should sell this stuff 😉
I also made mixed drinks for a social gathering. It tasted like it was made for adult beverages.
Btw can be used for cold (iced) or hot, just sayin’ 😉
